Glucono delta-lactone (GdL) is a food additive and preservative with many uses, including:

Food processing: GdL is used as a curing and pickling agent, leavening agent, pH control agent, and sequestrant.

Meat products: GdL is used in meat salads, spreads, and dry cured sausages. It slows the release of acid, which inhibits bacterial growth and speeds up drying.

Cheese production: GdL slowly acidifies milk, which can be used to make cream cheese, cottage cheese, mozzarella, and feta.

Baking: GdL is used in bread, pastries, cookies, cake doughnuts, and quick breads. It acts as a raising agent and extends the shelf life by lowering the pH and inhibiting mold growth.
